A Senior Production Chef is a first line management role, with operational responsibilities or responsibility for managing a team. They provide direction, instruction and guidance to ensure the achievement of set goals. Working in the private, public or third sector and in all sizes of organisation, specific responsibilities will vary, but the knowledge, skills and behaviours needed will be the same whatever the role.

Senior Production Chefs will also have accountability for the day-to-day running of the kitchen service, they may lead a brigade in the kitchen or support a Head Chef in larger establishments.


Entry requirements

You must be employed in a relevant role for a minimum of 30 hours per week. As a minimum, you should have 4 GCSEs at grade 4 or above, including English and Maths. You must also have achieved the Level 2 Production Chef apprenticeship or have substantial experience.

What will I study?

This apprenticeship will give you the knowledge, skills and behaviours required to work as a Senior Production Chef and will include the following:

  • Understand and supervise the production of centrally developed menu items and dishes according to organisational specifications
  • Understand and supervise the monitoring of the correct use and maintenance of food production equipment and the procedure for dealing with misuse and malfunctions
  • Understand the importance of combining nutrient groups to produce balanced menu items and dishes
  • Support team members to ensure the timely delivery of high quality food to the specification required.
  • Understand the importance of monitoring the team’s understanding and compliance with all relevant industry specific regulations, legislation and procedures
  • Understand how to operate efficiently to deliver profit margins, reduce wastage and support the overall financial performance of the business

You will also produce a portfolio of evidence demonstrating examples of your work throughout the apprenticeship.

Method of delivery

Senior Production Chef apprentices attend College on a day-release basis and work for their employer for the rest of the time.

How will I be assessed?

Continual assessment will take place throughout the duration of the apprenticeship.

The End-Point Assessment (EPA) comprises of:

90-minute on-demand test of 45 multiple-choice questions

4-hour practical observation and a 60-minute professional discussion

There are no specific College programme related costs, however you will be advised of any additional costs during your application and enrolment process.

Senior Production Chef Apprenticeship Level 3.

Good course combinations

It is not possible to combine this course with other Vocational, T Level or A Level programmes.

On successful completion of the apprenticeship there may be an opportunity to study a higher-level qualification or progress into a management role within the organisation.
