Cookery School: A Culinary Tour of Southern Italy
Join our Head Chef, Gio Achenza, for a culinary tour of the four Southern Italian regions of Puglia, Campania, Calabria and Basilicata
During this one-day cooking class, Gio will guide you through the process of recreating favourite Southern Italian dishes. From the familiar Neapolitan pizza and Limoncello to specific regional specialities such as Taralli Pugliesi and Panzerotti, the Southern Italian cuisine is influenced by the bounty of the Mediterranean and the agriculture of the region to showcase bold flavours of tomato, olive oil, and the fragrance of herbs and spices that have come to define Italian cuisine: oregano, basil, and citruses.
Over this one-day course and following demonstrations from Gio, you will work in our training kitchen to recreate the flavours of Southern Italy that you can then enjoy at home.
Throughout the day, Gio will give hints and tips on producing authentic Southern Italian cuisine and you will have the opportunity to try a range of regional ingredients and produce before enjoying your Italian delicacies over lunch which will be provided in Ashfields restaurant. All other items produced can be taken home for you to enjoy or share.

Entry requirements
There are no formal entry requirements for this course, but students must have an interest and passion for cookery and want to learn more.
Course units
On this one-day course, you will learn to prepare a range of the must-try foods of Southern Italy such as panzonella and ribollita.
During a full day of practical sessions taking place in our professional standard training kitchens, our Head Chef will work with you to build your confidence and skills to recreate the flavours of Southern Italy that you can then enjoy at home.

Refunds will only be issued if we are notified via the cancellation form up to 2 weeks before the course starts.
Course progression
After this course you could undertake any of the other York College Cookery School classes for your enjoyment.
If you were interested in gaining a formal qualification in catering, our tutors would be able to advise on suitable routes that are available on a full or part time basis.
